coloring, dad of the year, and southwest salad…
This week has crawled along. Once again, Chris and I are not going to bed early so we start the days off tired. That’s no good when the other two people in the house have more energy than God intended, and they have a set sleeping schedule that we enforce. Hmmm- one might think that if we can manage to get our kids in bed on time, we would be able to manage to get ourselves in the sack on time as well. No such luck. The wee hours of the night are the only time we have to ourselves and I don’t think we’ll realistically ever give them up.
So, nothing much has been going on this week. Just a few playdates, a few haircuts, a few moments of terror when Asher decided to climb up on a chair in the kitchen and play with the knives, coloring, crafts, and some lazy moments outside with the kids. I have felt kind of blah all week- no cause really, I just don’t have the normal amount of patience with the kids that I normally do. I love them immensely- but this week I feel like dashing off to some faraway tropical island and reading books on the beach while sipping ice cold margaritas in my bikini. I’m sure I’d come back fully tanned and relaxed.

Amai made this little figure out of silly putty on the window. You can’t really tell, but it has curly hair “just like me” she said.

And now such a perfect snapshot of the relationship between our kids and their daddy. We call each other “McGee” (don’t ask why- I don’t even remember how it started.) Mr. McGee… you are such an awesome dad. The kids adore you and so do I. I love doing life as Mrs. McGee.

And to end this post, I have to tip my hat to all the professional food photographers in the world. This salad was much more appetizing in person than in the picture. I didn’t realize how dirty the bowl looked until I took the picture. Or how wilted the greens looked, or just how overall messy it seemed. Nevertheless, this was my own version of southwest salad. I put halved cherry tomatoes, corn, black beans, diced green bell pepper, lots of different lettuce, and mixed it with ranch and chipotle tobasco. It was pretty good, though I’m fairly certain no chef in America would ever want this recipe- it’s probably really far off of the true way to make this salad. I’m always up for an experiment. (Much like the steak I cooked last night with a very specific marinade on it. It had been pre-wrapped in bacon, and no matter how strong the marinade was, all we could taste was bacon. Chris called it “bacon-steak.”)

Yummy. It was a kick-back to my vegetarian days. Sometimes I’m tempted to go that route again. Maybe when the kids are older.
Oh, one more thing. I’m signing up for an architecture course in the fall at our local community college. I studied architecture for two years in college before changing my major several times and graduating (finally) with Psychology. So, I’ve always wondered if I would enjoy going back to finish the architecture degree. Now I’m going to find out if I still have any desire to do it after one class. I don’t have any grand ambitions at this point- my first priority is staying at home with my kids while they are little. But we’ll see where God leads me. I’m excited about this one class for now.
